When I first arrived in Japan, the very first restaurant my wife took me to was Sobanone. It was here that I met Ryo, the chef, and we became friends straight away. When I asked for umeshu, they surprised me by asking which kind I wanted, introducing me to the variety of plum wines available. For those looking to explore beyond soba, the duck miso rice and various izakaya appetizers are equally enticing.
